  • 3 cups all-purpose flour
  • 3 cups granulated sugar

  • 4 large eggs
  • 1½ cups buttermilk
  • 1½ cups warm water
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract

  • 1½ cups butter softened
  • 8 oz cream cheese, softened
  • 1½ cups unsweetened cocoa powder
  • 3 teaspoons vanilla extract
  • 7-8 cups powdered sugar
  • about ¼ cup milk (as needed)

Method of preparation of the cake

  1. Preheat the oven to 180°C.
  2. Butter your three cake pans. Dust with flour and tap out the excess.
  3. Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed mixer until it is fully combined.
  4. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth.
  5. Divide the cake batter among the three pans.
  6. Bake for 30-35 minutes until the cake meets the toothpick/skewer test, where you stick a toothpick in and if it comes out clean, then the cake is ready.
  7. Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow them to cool completely.

  • 125 g dark chocolate chips
  • 100 g / 7 tablespoons of salted butter
  • 1 1/4 cups of fine white sugar
  • 1/4 cup / 65 ml of vegetable oil
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 cup / 17 g cocoa powder
  • 1 cups / 150g of plain flour

Method of preparation of the cake

  1. Preheat the oven to 150°C.
  2. Grease a cake pan and line it with parchment or baking paper.
  3. Melt the butter and the chocolate in a saucepan under heat.
  4. Add oil, vanilla and sugar to the butter and chocolate and then mix them. This has the effect of bringing down the temperature of the batter.
  5. After that, add eggs and mix until combined.
  6. For the dry ingredients, add sift cocoa, baking powder and flour directly into the bowl. You can also add the coffee if you are using it.
