  • Add the cardamom, cloves, cinnamon, bay leaf, and fennel.
  • Stir and leave to sizzle.
  • Add onion, ginger, garlic, turmeric, and the curry leaves.
  • Cook for 3-5 minutes.
  • Add garam masala and spices to the cooking pot.
