A South African food creator has wowed food enthusiasts after sharing an innovative twist on one of the country's most cherished traditional desserts. Rather than sticking to the classic baked method, the home baker demonstrated a unique fridge tart variation inspired by milk tart. The viral recipe video was posted on Instagram by @omdiekombuistafel on 14 October 2026, giving social media users a detailed step-by-step look at how to create the creamy treat at home.

Creative twist on classic South African milk tart

In the clip, the creator demonstrated how to make the "Melktert Yskastert" (milk tart fridge tart). She began by heating milk infused with cinnamon sticks to draw out flavour before preparing a smooth mixture containing condensed milk, custard powder, and cornflour. After combining the warm milk and custard mixture on the stove until thick, she tempered an egg into the hot batter and stirred in butter to ensure a silky texture.

To construct the tart, she layered classic Tennis biscuits at the bottom of a dish, poured half of the warm custard mixture, added a second layer of biscuits, and topped it off with the remaining mixture. After letting it cool completely outside the fridge to prevent the liquid from separating, she dusted the top with ground cinnamon and chilled it overnight before serving.
