A South African woman competing on the American cooking show MasterChef left judges speechless with a dessert she described as her love for South Africa on a plate.

Heidi Muston used the 60-minute dessert challenge to pour her heritage into every element of her dish. She drew on the colours of the South African flag for inspiration and centred the dessert around marula fruit, a flavour deeply rooted in South African culture. When judge Gordan Ramsey asked how marula was typically enjoyed back home, Muston laughed and said it was mostly used to get drunk. She had chosen to incorporate it as a liqueur in a mirror-glazed mousse served over a brownie crumb with raspberry coulis alongside.

The judges were visibly impressed. Ramsey called the mousse exceptional, praising the mirror glaze for adding sweetness and the crumb beneath for texture. Judge Tiffany Derry noted that a portion that size felt surprisingly light, telling Muston she had played to her strengths and that he could feel South Africa in the dish.

The most striking feedback came from judge Joe Bastianich who compared the dessert to her broader journey on the show. He said she had taken a big risk, executed real professional pastry techniques, and put together something where the sum was greater than its individual parts.

Muston said that every emotion she could imagine ran through her body during the challenge, but that she felt confident and proud of what she had put on the plate. She said:

"This is my love for South Africa on a plate."
