This quick and easy Malva pudding requires thirty-five minutes for preparation and cooking.

Ingredients

  • I cup of milk (250 ml)
  • 1 cup of wheat flour - preferably self-raising
  • 1 cup of sugar
  • 2 tablespoons of margarine
  • 1 egg
  • 1 teaspoon of bicarbonate soda
  • 1 teaspoon of apricot jam
  • 15 ml of vinegar
  • 1/2 cup of water
  • 1 can of evaporated milk

Instructions

  1. Mix margarine and three tablespoons of sugar until the mixture becomes creamy. Add a teaspoon of apricot jam and the egg, and then whisk it into the mixture. After that, add a cup of self-raising flour to the mixture.
  2. Dissolve a teaspoon of soda bicarbonate in a cup of milk and then add the milk to the flour mixture. Next, add the vinegar and mix all the ingredients well.
  3. Pour the mixture into a large microwave friendly dish. Microwave the mixture on high heat for about ten to twelve minutes. When ready, the outcome should be spongy and brown at the top.
  4. For the sauce, dissolve four tablespoons of sugar in boiling water, and then add evaporated milk and stir.

  • 2 tablespoons of butter
  • 3/4 cup of cream
  • 2 tablespoons of honey

Instructions

  1. Whisk the eggs in honey until the mixture becomes creamy. Add apricot jam and mix well.
  2. Melt butter (2 tablespoons) in a saucepan. Add milk and cider vinegar and then stir well.
  3. Remove the saucepan from heat. Add almond flour, baking soda, and desiccated coconut and mix well. Next, add the egg-honey mixture and continue mixing.
  4. Pour the mixture into an ovenproof dish. Microwave for about ten to fifteen minutes on high heat. When ready, the Malva pudding will be spongy and brown on the top, but you have to slide a knife in the confectionery to confirm if it has cooked well. If the knife is clean, the cake is ready.

  • 1 cup of flour

  • 125 grams of butter
  • 3/4 cup of sugar
  • 1 teaspoon of vanilla essence
  • 1/2 cup of sugar

Instructions

  1. In a large bowl, place the chopped raisins and baking powder. Add boiling water into the bowl and leave the mixture to soften for about thirty minutes.
  2. In a separate bowl, mix the sugar and butter. Beat the mixture until it becomes fluffy and light. Add eggs and continue whisking the mixture until it turns pale yellow, and then add a teaspoon of apricot jam and mix.
  3. Add a teaspoon of vinegar to half a cup of milk, and then add the milk to the sugar-egg mixture and mix well.
  4. Take the finely sieved flour and salt and add them to the mixture. Stir to mix well.
  5. Now, add the dates plus a handful of chopped pecan nuts. Stir using a spoon until well mixed.
  6. Spread a tablespoon of butter over a microwave friendly dish. Pour the Malva pudding and microwave on high heat until the top browns and the confectionery becomes spongy.
  7. In a small saucepan, melt two tablespoons of butter. Add cream, sugar and vanilla essence and boil for three minutes.
