- 30g butter/ margarine
- 125g white sugar
- 1 extra large egg
- 1 tablespoon of apricot jam
- 1 teaspoon of bicarbonate of soda

- 1 tablespoon of white vinegar
For Sauce
- 125g butter/margarine
- 1/4 cup white sugar
- 65ml (1/4 cup) water
- 185ml (1/4 cup) cream
- 5ml (1 teaspoon) vanilla essence
Method
Pudding
- Into a bowl, mix the butter and sugar together until completely combined resulting in a creamy mixture. Beat the large egg into the mixture until light and fluffy.
- Add your apricot jam into the mixture and beat it in as well.
- Add the milk into a separate bowl and dissolve the bicarbonate of soda into the milk.
- Sift the flour and salt together to ensure uniform distribution of the salt within the flour.
- Proceed to add the flour and salt combinations into the bowl with the light mixture of butter, sugar, egg and apricot jam made earlier. Alternate between the flour and the milk mixture when adding them into the butter-sugar mixture.
- When all are well combined, stir in the vinegar.
- Pour the final mixture into a round dish of your choice. Cover with aluminium foil or with a lid and set it in the oven to bake for one hour at 180°C.
Sauce
- In a saucepan, melt the butter, add in the sugar and water and bring this to a boil. After boiling, let it simmer while constantly stirring for 2 minutes.
- Then, remove the mixture from the stove and add in the cream and the vanilla essence. Stir them both in until well combined.
