Ingredients

For Pudding

  • 30g butter/ margarine
  • 125g white sugar
  • 1 extra large egg
  • 1 tablespoon of apricot jam
  • 1 teaspoon of bicarbonate of soda
  • 1/2 cup of milk
  • 1 cup of cake flour
  • A pinch of salt
  • 1 tablespoon of white vinegar

For Sauce

  • 125g butter/margarine
  • 1/4 cup white sugar
  • 65ml (1/4 cup) water
  • 185ml (1/4 cup) cream
  • 5ml (1 teaspoon) vanilla essence

Method

Pudding

  1. Into a bowl, mix the butter and sugar together until completely combined resulting in a creamy mixture. Beat the large egg into the mixture until light and fluffy.
  2. Add your apricot jam into the mixture and beat it in as well.
  3. Add the milk into a separate bowl and dissolve the bicarbonate of soda into the milk.
  4. Sift the flour and salt together to ensure uniform distribution of the salt within the flour.
  5. Proceed to add the flour and salt combinations into the bowl with the light mixture of butter, sugar, egg and apricot jam made earlier. Alternate between the flour and the milk mixture when adding them into the butter-sugar mixture.
  6. When all are well combined, stir in the vinegar.
  7. Pour the final mixture into a round dish of your choice. Cover with aluminium foil or with a lid and set it in the oven to bake for one hour at 180°C.

Sauce

  1. In a saucepan, melt the butter, add in the sugar and water and bring this to a boil. After boiling, let it simmer while constantly stirring for 2 minutes.
  2. Then, remove the mixture from the stove and add in the cream and the vanilla essence. Stir them both in until well combined.
  3. Take out the pudding from the oven when ready. Pour the sauce over the hot baked pudding and the dessert is ready to be served.

  • 150g all-purpose flour
  • 1 teaspoon baking soda

  • 1 heaped tablespoon butter
  • 1 teaspoon white vinegar
  • 1/3 cup of milk

For Sauce

  • ¾ cup (120ml) fresh cream
  • 3 ½ cups (100g) butter
  • 3-5 ounces (90-150g) sugar
  • 1/3 cup (90ml) hot water
  • 2 teaspoons vanilla essence

Method

  1. Preheat the oven to 180°C or 350F.
  2. Grease an oven dish, preferably a round one.

Pudding

  1. In a bowl, whip the sugar and 2 large eggs together until thick.
  2. Melt the butter and then add it, together with the vinegar, to the whipped mixture.
  3. Sieve the flour, salt and baking soda together to ensure uniform distribution.
  4. Add the sifted flour mixture into the wet mixture until everything is well combined.
  5. Pour this mixture into the dish greased earlier and place it into the preheated oven for 30 to 45 minutes.

Sauce

  1. In a saucepan, melt the butter and mix in the cream, sugar, hot water and vanilla essence and stir continuously until well combined.
  2. Take it off the heat when ready and pour it over the pudding immediately when it is ready and out of the oven.
  3. Leave it to stand and set for a little while before serving. It can be served with the ice cream of your choice. Make sure to serve while still warm.

  • 1.5 cup all-purpose flour

  1. In a microwavable bowl, mix the water, sugar, vanilla essence and evaporated milk until well combined.
  2. Heat the mixture in the microwave until the sugar is completely dissolved into the liquids.
  3. When the pudding is ready, pour the hot sauce over it in small amounts, allowing the spongy pudding to absorb the sauce well. You can poke a few holes in the pudding to help it absorb the sauce faster.

Sauce

  1. In to a saucepan, place the evaporated milk, whole milk, water, butter, sugar and salt and bring them to a boil.
  2. Simmer the mixture for 2-3 minutes until the sugar is completely dissolved. Stir in the caramel extract continuously and keep it warm while the pudding is still baking.
  3. Immediately, the pudding is ready and out of the oven, pour the sauce over it slowly, allowing it to soak well.
  4. Set it aside for a little while. Top it off with whipped cream and serve while still warm.

  1. In a mixing bowl, cream the butter, sugar and eggs together until they form a light and fluffy mixture.

  3. In another mixing bowl, sift the flour. Slowly add in the creamed butter-sugar mixture and jam mixture to the flour. Add in the milk and salt also and mix well to form a smooth batter.
  4. Pour the batter into the greased baking dish and bake it in the oven for 55 minutes and until the pudding is golden-brown.

Sauce

  1. Place the milk, water, sugar, butter and vanilla essence into a saucepan and bring them to a boil until all the sugar crystals are completely dissolved.
  2. Simmer the sauce over low heat while stirring continuously as the pudding bakes.
  3. Once the pudding is ready and out of the oven, pour the sauce over it immediately and slowly to allow it to soak up the sauce.
  4. Serve the sauce coated pudding while hot with a side of custard for the perfect dessert.
