Quick and easy paptert recipe with cream
Everybody in South Africa loves good paptert. The paptert, also known as a porridge pie, is a modern addition to the South African barbeque, and this cheesy dish has warmed its way into the hearts of many South Africans. There is truly nothing better than combining bacon and cheese, and in this article, we show you how to do that to perfection.

Paptert recipe
For this recipe, we incorporate fresh herbs and spices to ensure that you have the perfect healthiest version of the sweetcorn tert!
Ingredients
Porridge
- 1.25 litres water
- 550 g of maize meal
- One teaspoon of salt
- One tablespoon of butter
Filling
- Two finely diced onions
- 125 g chopped brown mushroom
- Olive oil for frying
- Two garlic cloves
- 550 g cups of grated cheese
- One tin of chopped tomato
- Fresh herbs (these include coriander, thyme, oregano, parsley)
- Two tablespoons of tomato paste
- One teaspoon of sugar
- One tin of sweet drained corn or 1 and 1/3 cup of frozen corn
- 125 g of chopped bacon, diced
- One capsicum, chopped
- Salt and black pepper
- 250 ml of cream
Method of preparation
The stywe pap resep
1. Bring the water to a steady simmer, and add the salt.
2. Slowly incorporate the maize meal, and keep stirring as you add, making sure it is well mixed. You can cover with the lid but occasionally stir.
3. It is required that the stywe pap should be stiff but spreadable, you can, therefore, add either the mielie or hot water until you are content with the consistency.
4. This process should take about half an hour, at this point you can add some butter into your pap.
The filling recipe
- Use your pan and oil to fry the bacon. Once cooked to your perfection, remove the bacon from the pan, dice them and dry them with a paper towel.
- Once the garlic is browned, add onions and oil to your pan, butter and all other fresh ingredients and spices (capsicum, tomato, black pepper and salt).
- Once cooked, add in your mushrooms and let them cook in the sauce.
- Add bacon and corn into the mixture and ensure the sauce remain thick. You can add any spicy herbs that you prefer.
The layering recipe
- Place the pap onto a greased ovenproof dish, and smooth it onto the bowl using a wooden spoon.
- Add about half of your filling on top of the pap and sprinkle some cheese over it.
- Spread the rest of the pap and then add more filling and cheese over it to your liking.
- If you prefer, you can add cream over it at this point.
- Let it cook for about 60 minutes at a temperature of 180°C.
- You know your mielie tart is ready when the cheese has browned.

Mielie tert resep
This is the traditional paptert resepte, and it is so simple that a child can probably cook it! The ingredients needed for this mielie tert are also very easy to get from your nearest supermarket.
Ingredients
Braai pap
- 500g of maize meal
- Two tablespoons of butter
- 1.5 litres of water
- One tablespoon of salt
- One teaspoon of dried sweet basil
Filling
- Sunflower oil for frying
- Butter for frying
- Two packs of diced bacon
- Two tablespoons sugar
- 4 cups of grated cheese (mozzarella or cheddar)
- Three peeled and chopped tomatoes
- Fresh chopped herbs ( thyme, basil, parsley etc.)
- One finely diced onion
- One pack of chopped/sliced brown mushrooms, cut in slices
- Salt and pepper
Method of preparation
Stywe pap recipe
- Bring the water to a simmer, add in the salt and butter. You can also add in the basil for an extra tinge at your preference.
- Add in the maize meal slowly as you stir. It is advisable not to use completely boiling water to prevent lumps from forming. Keep adding the maize meal while you stir.
- Once the consistency is perfect, reduce the heat, cover for about 30 minutes while occasionally stirring between intervals.
Filling recipe
- Place the sunflower oil and/or butter in the pan on high heat, add in the onions until they are a brown-golden colour.
- Add in the chopped tomatoes and when they are well cooked, place the mushrooms into the pan and let it cook.
- Add sugar, black pepper, salt and any other spice you may like to include into the mixture.
Layering recipe
- Coat a large ovenproof dish with grease or non-stick spray. Spoon half of the pap onto the dish and smooth it out using a cooking spoon.
- Take half of the filling made, and spoon it out over the pap, ensuring it is even. Add half of the cheese and some basil over the spooned out filling.
- Spoon the remaining porridge/pap over the filling. It is essential to be very gentle, in case the pap is thick, you can add water to it, and this will make it looser.
- Add the remaining filling on top, topped off with cheese and basil.
- Place this in the oven at 180°C for half an hour or until the cheese is melted and browned.
6. Let the pap tert set for about 10 minutes before serving.
Stywe pap recipe
Ingredients
Porridge
- 250g of maize meal
- 750 ml of water
- ½ teaspoon of salt
- One tablespoon of butter
Filling
- One tin of tomato and onion mix
- Sunflower oil used for frying
- One pack of diced bacon
- One tin of tomato
- One pack of mushrooms which are chopped in slices
- Two cups of grated cheddar/mozzarella cheese
- Freshly chopped basil
- One tablespoon of sugar
- Salt and pepper
Method of preparation
How to make pap
- Pour the water into a cooking pot, when it picks up some heat, add butter and salt to it and stir them in.
- Add the maize meal in short intervals and stir it in.
- Once fully incorporated, reduce the heat, cover the pot and let it cook for 30 min to 1 hour.
Filling
- Firstly, fry the bacon in a pan using sunflower oil. Once crispy, add the onion and tomato, mix as well as the mushrooms.
- Add salt, sugar, pepper, and any other spices that you may like to the saucy mixture.
- Let it cook until ready.
Layering recipe
- Using a large greased ovenproof dish, spoon half of the pap mixture into it. You can even use a wooden spoon.
- Place half of the filling mixture on top of the porridge, and even it out as well.
- Sprinkle fresh herbs and half of the grated cheese over it
- Using the remaining porridge as the top layer, add the filling on top and top it off with basil and cheese and other fresh herbs.
5. Place the dish in the oven and let it cook for half an hour.
6. Enjoy your paptert, which is best served warm.

How to make a microwave pap
This is a recipe for those people who might be feeling lazy and do not want to use the stove unless they have to. This recipe gives you an easy method of how to make stiff pap in your microwave!
- The only ingredients needed here are maize meal and water.
- Take about 3 cups of the maize meal and place it in the microwave for 3 minutes.
- Take it out, stir and put it back for three more minutes.
- Boil 4 cups of water and add this to the microwaved maize meal. Stir and whisk it to get rid of lumps.
- One last time, microwave the mixture for 3 minutes, and you will have your porridge.
