A food creator known as Tapiwa Guzha has Mzansi buzzing after sharing a close-up kitchen video demonstrating how to make African ice cream sandwiches using deep-fried pastry. The clip, posted on 8 October 2026, quickly drew a wave of reactions from South Africans who could not quite believe what they were seeing.

The video walks viewers through a creative process that puts a uniquely African spin on a classic dessert. Tapi Tapi explained that the concept draws from a wide range of deep-fried pastries found across the continent, including Mahamri, Pafpaf, Magwinya, Vitumbua, Mandazi, Beignets, Mikati, and Bofrot, commonly known in South Africa as fat cakes.

What makes this version stand out is the dough itself. Rather than using plain wheat flour, Tapi Tapi mixed wheat and cassava flour before sprinkling in teff seeds to deepen the flavour of the pastry. The ice cream filling was prepared in two stages: first by steeping warm pastry in fresh milk to extract its flavour, then by folding toasted pastry crumbs into the churned ice cream.
