  • 330 g or 1½ cups of caster sugar
  • 115 g of soft unsalted butter you can have a little more for greasing
  • 60 ml or ¼ cup of smooth apricot jam
  • 1 egg
  • 250 ml or 1 cup milk
  • 2 teaspoons of white vinegar
  • 1 teaspoon of vanilla bean paste
  • 150 g or 1 cup of plain flour
  • 1 teaspoon of bicarbonate of soda
  • A pinch of salt
  • 60 ml or ¼ cup of hot water
  • 250 ml or 1 cup of cream or evaporated milk
  • lightly whipped cream or crème anglaise, to serve

Method of preparation

  2. Beat one cup of the sugar, butter, apricot jam and the egg until pale, fluffy and creamy using an electric mixer.

  4. Sift together the dry ingredients including the flour, bicarbonate of soda and salt.
  5. Fully combine the flour and milk mixture with the egg mixture.
  6. Pour into prepared baking dish, cover with lightly oiled foil and bake for 40-45 minutes, or until it becomes just firm.
  7. When pudding is almost ready, stir in the hot water, cream and also the remaining sugar and butter in a saucepan over medium heat. Do this until the butter melts and sugar dissolves.
  8. When it is ready, pour the sauce over the pudding in the dish.
  9. Serve with lightly whipped cream or crème anglaise.
