Ingredients
- 1 cup mixed nuts/seeds (this recipe uses raw almonds, linseeds, pumpkin seeds, and sunflower seeds).
- 1 cup coconut flour
- 1 сup almond flour
- 2 cups of water
- 1 tbsp. bicarbonate of soda
- ½ cup coconut oil (in liquid form)
- 3 tbsp. psyllium husks to help everything bind together
- ¼ cup coconut milk or natural yoghurt or extra water
- 2 tbsp. honey or any other natural sweetener
- ½ tbsp. salt
Method
- Pre-heat the oven to a temperature of 180 degrees Celsius. Grease a small medium-sized baking tin and line it.
- Mix all your ingredients together, and add some more water if the mixture seems too dry. However, keep in mind that this is not the usual bread and it will be crumbly and have a texture similar to that of beach sand.
3. Transfer the mixture into your lined baking tin and use the back of a spoon to gently smooth out the surface. Bake it for approximately 30 minutes until your loaf turns golden.

Coconut flour banting bread recipe

- ½ tsp. baking powder
- ½ tsp. melted butter
- 50g sunflower seed flour
- 1 egg
- A pinch of salt
Method
- Melt the butter in your baking container.
- Mix together the baking powder, sunflower seed flour, and salt in a large bowl until they are consistently mixed.
- Add the melted butter and the egg and mix them evenly.
- Add the mixture to your baking container and use the back end of a spoon to smooth over the top.
5. Microwave the batter on a high temperature for approximately 1 minute and 45 seconds.

- 1 cup flax seed meal
- 1 cup coconut flour
- 4 tbsp. baking powder
- ¼ cup psyllium husk powder or flakes
- 1 tbsp. salt
- 2½ tbsp. fresh rosemary leaves that are finely chopped
- 1½ tbsp. fresh sage leaves that are finely chopped
- 2 tbsp. fresh thyme leaves that are finely chopped
- 12 large eggs
- 2 tsp. garlic powder
- ½ tbs. olive oil, plus some extra for greasing the baking pan
- ½ cup whole milk
- 2½ tbs. raw apple cider vinegar
Method
Pre-heat the oven to a temperature of 160 degrees Celsius. Grease a small medium-sized baking tin and line it.
- Mix together the golden flaxseed meal, coconut flour, psyllium husk powder or flakes, garlic powder, baking powder, herbs, and salt. You may also opt for dried herbs but use a half teaspoon less so that the flavour is not too strong.
- Beat in the eggs, add the organic apple cider vinegar, milk, and oil. Beat them until consistently blended.
3. Add the dry ingredients a little at a time and mix until they have just combined. Avoid over-mixing as this might result in a dense bread.
4. Lightly grease your non-stick baking pan with olive oil. Use a rubber spatula to scrape your batter into the ready pan and smooth out the top.
5. Bake the bread until it is firm to the touch, which will be approximately 80 to 85 minutes later. Leave the bread in the pan to cool for approximately five minutes before removing it. You can then place it on a wire rack to cool completely.

- 10ml baking powder
- 60ml psyllium husks
- 6 eggs
- 1 cup plain yoghurt, full cream
- 5ml salt

Method
Pre-heat your oven to a temperature of 180 degrees.
- Mix together all the dry ingredients (the seeds, the flour, baking powder, psyllium husks, and salt).
- Beat in the six eggs and mix.

- 200g boiled, mashed, and drained pumpkin
- 220g almond flour or Sunflower seed flour
- 1 level tbs. psyllium husks
- 1 level tbs. baking powder
- ½ tbs. salt
- 9 eggs
Method
Pre-heat the oven to a temperature of 170 degrees Celsius. Grease a loaf pan and spread a baking paper to cover both sides and the bottom.
- Steam the pumpkin until it is tender, leave it to cool, and squeeze out the excess moisture.
- Mix together the baking powder, flour, and psyllium in a large bowl.
- Beat the eggs, separating the yolks and the egg whites into different bowls.
- Beat the egg whites till they become stiff and set aside.
- Beat the egg yolks till they become frothy then add the pumpkin and mix until consistent.
- Add in the egg whites, a little at a time until they are well combined. Be careful not to mix out all the air.
- Place this banting bread mix in the ready baking pan and let it bake for approximately 75 minutes. Use a skewer to check whether it is well cooked.
- Leave the loaf to cool then slice it out.
